Warm up on a cold winter’s day with a steaming bowl of this scrumptious Three Pepper Vegetarian White Bean Chili!
The weather finally seems to be cooling down here in NYC. Nothing too crazy, but I’ll take it!
To celebrate, I made a pot of Creamy Kale and Potato Soup. This rich, flavorful soup is loaded with fresh veggies. You’ll want to eat it all fall long!
Did you know that February 26 is National Chili Day? Probably not, unless you are a true chili fanatic.
I read about this special holiday somewhere, and I thought it would be fun to come up with a recipe to honor such a wonderful day. 😉 Chili is the perfect comfort food, and this winter, I’ll take all the rich, warming meals I can get.
My Roasted Vegetable Quinoa Chili is a delicious vegan meal in a bowl, and it’s just the right thing to satisfy you up on a freezing cold day!
Sorry for the quiet around here last week. I’ve been a little under the weather. Nothing terrible, just a cold that doesn’t want to go away.
Speaking of being sick, have you ever taken a sick day only to discover that your cupboards are bare and there’s nothing to eat? It’s happened to me more than once, and there really is nothing worse.
This easy Peas and Rice Soup was invented on just such an occasion!
Getting together with friends and family is my favorite holiday tradition. It just seems a little more special at this time of year.
Unless it’s one of the big days – you know, Thanksgiving, Christmas, or New Years – I like to keep the food casual and easy. Guests are more relaxed when the don’t need to figure out what fork to use, and it’s easier on the cook, too! Soup is my go to meals for these occasions.
Kettle Brand contacted me recently and asked if they could send me some flavors to sample. I’m a major chip lover and Kettle Brand is a fave, so it didn’t take me long to say “Yes, please!” They also challenged me to a twist to a holiday recipe using their chips or popcorn.
I immediately thought of one of my favorite soup recipes, Creamy Tomato Basil Soup. Instead of the croutons I usually top the soup with, I used Kettle Brand Salt and Freshly Ground Pepper Popcorn.
