I have a major sweet tooth, and one dessert I can never pass up is cheesecake. It's just so rich and creamy. Yum!
When the weather gets hot and humid, my craving for cheesecake doesn't go away, but I'm definitely not turning on my oven! Instead, I make my favorite easy no bake cheesecake recipe.
This summer I decided to give my quick, easy cheesecake recipe a patriotic twist. It turned out so delicious and so colorful, too.

No Bake Red, White, and Blue Cheesecake Tart
The first step in this easy no bake cheesecake recipe is the graham cracker crust. It takes minutes to make, yet it's so buttery and delicious!
You'll press the crust into an 11-inch tart pan. Make sure to use one with a removable ring ... it will make your life much easier at serving time.
The cheesecake filling only requires 4 ingredients, and it's wonderfully light and sweet with a touch of lemon flavor.
The only step for this dessert that requires any patience is chilling the filling ... it's definitely worth the wait though!
My favorite part of this No Bake Red, White, and Blue Cheesecake Tart is the fresh berries!
I used a mixture of strawberries and blueberries, but feel free to use your favorite berries instead. You can also get creative arranging them ... try adding rings of berries or even stripes. Whatever you do, it's sure to be super festive.
I should have waited for a party to make this easy no bake cheesecake recipe, because it didn't last long in my home. Between my husband and I, we gobbled it up way too fast!

No Bake Red, White, and Blue Cheesecake Tart
Ingredients
For Crust:
- 12 graham crackers, crushed
- 6 tablespoons butter, melted
- ¼ cup sugar
- ¼ teaspoon salt
For Filling:
- 1 cup heavy cream
- 1 cup powdered sugar
- 2 (8-ounce) packages neufchâtel cheese, or cream cheese, at room temperature
- 1 lemon
For Topping:
- 1 pound strawberries
- 1 pint blueberries
Instructions
Prepare graham cracker crust:
- Combine graham crackers, butter, sugar, and salt in a medium bowl. Mix well.
- Press crust firmly into a tart pan with a removable bottom.
- Refrigerate crust while you prepare the filling.
Prepare filling:
- Combine heavy cream and powdered sugar in the bowl of a stand mixer.
- Whip cream until stiff peaks form, then transfer to a small bowl and set aside.
- In same bowl (no need to clean), mix neufchâtel cheese until completely smooth.
- Zest lemon and then mince zest.
- Juice lemon, then add zest and juice to cream cheese. Mix well.
- Gently fold in whipped cream, ⅓ at a time, until completely incorporated.
Assemble tart:
- Remove graham cracker crust from refrigerator. Top with filling.
- Refrigerate tart until filling is completely chilled, at least 2 hours.
- Hull and slice strawberries.
- Arrange strawberries around edge of tart and then fill the center with blueberries. Reserve any extra berries for serving.
- Cut tart into wedges and serve with leftover berries. Enjoy!
