Ingredients
This Baked Oatmeal with Peaches uses simple, healthy, and easy to find ingredients! Here's what you'll need:
- Peaches - Choose the freshest, most flavorful peaches you can find for this recipe. I used yellow peaches this time, but other varieties will also work.
- Oats - This recipe calls for old fashioned rolled oats. Avoid using instant oats and steel cut oats, because they absorb liquids differently and have differently cooking times.
- Nuts - Chopped nuts add a wonderful flavor and texture to the finished oats. I used pecans, but walnuts or other nuts may also be used. If you're not a fan of nuts (or have an allergy), feel free to skip them.
- Cinnamon - Fragrant ground cinnamon pairs perfectly with fresh peaches and gives this oatmeal its classic flavor.
- Maple Syrup - This recipe is naturally sweetened with maple syrup, which pairs perfectly with the fresh fruit and hearty oats.
- Vanilla - A little vanilla extract adds another layer of cozy flavor this breakfast recipe.
- Milk - For best results, use 2% or whole milk. Unsweetened plant based milks also work great (I used my fave soy milk).
- Eggs - The recipe calls for two large eggs, which are used bind the ingredients together.
- Leavener - A little Baking Powder helps the oats rise, which lightens the overall texture.
- Salt - You need just a bit of kosher salt to pull all the flavors together.
This recipe is naturally vegetarian, as well as gluten free. If you have an allergy, make sure to use oats marked gluten free to avoid cross-contamination. For a vegan option, use plant based milk and skip the eggs, or use a vegan egg replacement.
You'll Also Need
You'll need a small bowl to lightly beat the egg, a large bowl to mix the oatmeal ingredients together, and an 8 x 8-inch square pan for baking. I used my favorite Emile Henry Square Baker ... it's easy to clean and looks so beautiful on the table!
How to Make Peach Baked Oatmeal
This sweet breakfast bake couldn't be easier to make! You'll find a detailed recipe card below, but here's an overview of the steps:
- Mix dry ingredients. Start by stirring together the oats, baking powder, cinnamon, and salt.
- Add wet ingredients, peaches, and pecans. Next, you'll stir in the eggs, milk, maple syrup, vanilla extract, peaches, and pecans. Mix well.
- Transfer to a baking dish. Spray a square baking dish with nonstick spray, then add the peach-oat mixture.
- Bake the oats. You'll know the baked oats are done when they're set and lightly browned.
Wasn't that easy? If you're a fan of the juicy summer fruit, this easy Peach Baked Oatmeal is sure to become on of your favorite morning recipes!
You can serve these oats as-is or add a few toppings. I like mine topped with Greek yogurt and more fresh fruit (if I have it) for an amazing Peaches and Cream flavor, but you'll find more serving suggestions below.
Variations
Once you've mastered the basic recipe, you can start experimenting! Here are a few ideas to inspire you:
- Frozen / Canned Peaches - If you get a craving for this recipe outside of summer, you can substitute frozen or canned peaches for the fresh ones. Choose peaches that are packed in juice, not heavy syrup, and make sure to drain them well before using.
- Other Fruits - The peaches are tasty on their own, but you can combine them with other fruits (such as blueberries, raspberries, cherries, or apples), too. A little diced crystallized ginger would also be delish.
- Nuts - I used pecans when making this, but other nuts will also work. Try walnuts, pistachios, or almonds. You could also skip the nuts altogether, if you prefer, or substitute your favorite seeds.
- Spices - I kept things simple and just used cinnamon, but other warm spices, like ginger, cardamom, cloves, nutmeg, or allspice, will also taste great with the peaches. You could also use a spice blend, such as pumpkin spice.
- Vegan - To make a vegan version, simply use plant based milk and skip the eggs (or use a vegan egg replacement).
- Cups - This recipe can also be portioned into single servings by baking it in a muffin tin (or easier-to-clean silicone cups) instead of a square pan. Make sure to spray the cups well with nonstick spray, and keep a close eye on the cups as they bake (baking time will be about 10 to 15 minutes shorter).
Serving Suggestions
This Baked Peach Oatmeal has a different consistency than regular oatmeal, as you can probably tell from the photos! Unlike the creamy porridge you get when cooking oats on the stove, this breakfast casserole has more of a firm, bread pudding-like texture.
The oats are delicious served as-is, or you can top them with yogurt, sliced peaches, and a sprinkle of cinnamon. Many people also enjoy them with milk. This recipe is lightly sweetened. If you prefer a sweeter breakfast, simply sprinkle a little brown sugar over the top or drizzle the oats with maple syrup before eating. Yum!
Storage
Peach Baked Oats are one of the best make ahead breakfasts! And they're great for meal prep, too ... make the recipe on Sunday, then enjoy a quick morning meal all week long.
To store, refrigerate leftovers in an airtight container. They'll stay fresh for three to four days, and you can reheat the oats gently in your microwave before eating. You can also freeze leftovers for one to two months. I like to wrap individual portions separately, them store them portions in a larger airtight, freezer-safe container. That way, you can easily remove a single serving.
