This summer has been HOT ... like hotter than any other I can ever remember. I guess I should have realized what I was signing up for when I moved to Texas.
I'm not cut out for 100+ degree days, so my solution for beating the summer heat is twofold: a) hole up in my apartment or b) spend as much of the summer as possible traveling somewhere cooler (lol). When that's not possible, you can find me cooling off with a cold cocktail. And more often than not, it's a Mojito.
While I love a classic Mojito, it's also fun to experiment with different flavors. And I have a new favorite that I think you're going to enjoy just as much as I do!
The tart-sweet flavor of this refreshing Pomegranate Mojito Cocktail is the perfect way to take the edge off a scotching hot day. Although with it's vibrant red color, it would be just as at-home during the holidays!

Ingredients
You'll need just a few ingredients to prepare this classic cocktail with a twist:
- Pomegranate Juice - You can use store bought or homemade pomegranate juice to make this drink. I used tasty POM Wonderful, which works perfectly, and is easy to find in stores and online.
- Lime - Fresh lime juice is essential for this simple cocktail (do not use bottled). You'll need half of one juicy lime per drink, plus more for garnishing.
- Sugar - I prepared this cocktail using regular granulated sugar. You can also use superfine sugar (which dissolves easier) if you prefer.
- Club Soda - An essential Mojito ingredient. In a pinch, you could use sparkling / mineral water (like Topo Chico).
- Fresh Mint Leaves - You'll go through a lot of mint (especially if you're making cocktails for guests), so buy more than you think you'll need.
- Rum - This recipe uses white rum. As mentioned below, I use Bacardí Carta Blanca (Superior).
Tip: Pomegranates are typically in season around holiday-time, so don't save this cocktail just for summer. It feels especially lovely and festive at Christmas or Thanksgiving!
I recommend using Bacardí Carta Blanca (Superior) for this cocktail. It's a classic choice for mojitos, easy to find, and affordable. Other white rums work fine though, so feel free to substitute your fave. Avoid dark, spiced, and flavored rums for this drink.

To make this refreshing Pomegranate Rum Cocktail, you’ll need a muddler, jigger, and bar spoon. If you don’t have these items, I’d recommend purchasing a cocktail making kit, which will have everything you need to make this drink (and future cocktails). You’ll also need a Collins glass (or large highball), plus plenty of ice, for serving the finished drink.
How to Make a Pomegranate Mojito
These Pomegranate Mojitos are surprisingly easy to make! You'll find a detailed, printable recipe card at the end of this post, but here's a quick overview:
- Muddle lime and sugar. Start by cutting one lime into eight wedges. Squeeze four of the wedges into a Collins glass (or a large highball), then drop them into the glass. Add sugar and a little club soda. Use your muddler to press and twist the ingredients together a few times. You're simply trying to extract the liquid from the lime and combine it with the sugar ... no need to pulverize anything!
- Prepare mint. Stack the mint leaves in the palm of your hand. Then, use your other hand to smack the leaves about five to six times, or until they smell fragrant. Once you smell that minty scent, rub the leaves over the rim of your glass, then drop them into your drink.
- Add rum and pomegranate juice.
- Fill glass with ice. Leave a little space at the top of your glass.
- Top off with club soda. Add more club soda, then stir everything together. When you're finished, the drink should be a uniform color, and the mint should be distributed throughout the drink.
- Garnish. I like to garnish this gorgeous Pomegranate Cocktail with a generous sprig of mint and a juicy lime wedge. If you made your drink with fresh pomegranate juice, make sure to reserve a few seeds (arils) to drop on the top. So pretty!

Tip: Preparing the mint this way brings out all of its flavor without any bitter taste you might get from muddling it. And bonus: no little bits of mint stuck in your teeth! I learned this easy trick during a mixology class at Casa Bacardí in Puerto Rico.
Mocktail Variation
To make this Pomegranate Drink alcohol-free, simply leave out the rum. Then, add an extra splash or two of club soda to dilute the ingredients, or enjoy it as-is for a fruitier, sweeter mocktail.

Ingredients
- 1 medium lime, cut into 8 wedges
- sugar
- club soda
- 12 mint leaves
- ½ cup pomegranate juice
- 2 ounces BACARDÍ Superior White Rum, or other white rum

- Squeeze four lime wedges into a Collins glass (or large highball), then drop into glass. Add three level bar spoons sugar and 1 ounce club soda.
- Using a muddler, press and twist ingredients together a few times.
- Stack mint leaves in your palm. Smack leaves with your other hand, 5 to 6 times, or until fragrant.
- Rub leaves over the glass rim, then drop in.
- Add pomegranate juice and rum to glass, then fill with ice. Top off with club soda.
- Use a bar spoon to vigorously stir ingredients until drink is well mixed.
- Serve drink immediately, garnished with a sprig of mint, lime wedge, and a few pomegranate seeds (arils), if desired. Enjoy!
