I'm on a major Baked Oatmeal kick lately. There's nothing better than a hot meal on a chilly morning, and it doesn't get any easier (or more delicious) than this tasty baked breakfast!
My basic Baked Oats recipe is so flexible. You can easily customize it with different flavorings and ingredients like nuts and fruit. I love experimenting with the recipe, but come fall, this Pumpkin Baked Oatmeal is my favorite!

This Pumpkin Pie Baked Oatmeal has a different texture than you might be expecting, which you can probably tell from these photos! Unlike the creamy porridge you'll get when preparing oats on the stovetop, this breakfast bake has a firmer, bread pudding-like consistency.
You can eat the oats as-is, or you can serve them topped with yogurt and a sprinkle of pumpkin spice like I did, or add some fresh fruit. Some people even like them with milk. For a sweeter breakfast, sprinkle a little brown sugar over the top or drizzle with maple syrup before eating. Yum!
Storage
This Baked Pumpkin Oatmeal is a great make ahead breakfast that's perfect for meal prep ... prepare the recipe on Sunday, then enjoy a yummy breakfast all week long! Refrigerate any leftovers in an airtight container, and they'll stay fresh for up to four days. Then reheat gently in your microwave before eating.
You can also freeze leftovers for one to two months. I recommend wrapping individual portions separately before storing them in a larger airtight container. That way, you can easily pull out a single serving.

- ⅓ cup packed brown sugar
- 1 tablespoon pumpkin pie spice
