It's day two of birthday week! Did you catch my Birthday Cake Pops with Sprinkles yesterday?
I love coming up with a fun theme for my birthday every year ... I've done Pink and Gold, Fiesta, and even French-Themed. This year though, it's all about sprinkles!
And it isn't a party without a cocktail, so I wanted to do something fun and colorful to go with all those sprinkles.
This Raspberry Bellini is exactly what I had in mind, and I know you're going to love it just as much as I do!
About the Cocktail
It doesn't get much easier than this Raspberry Bellini ... only three ingredients. And yet, it's so tasty!
This simple champagne cocktail is perfect for a birthday party, but also for brunch, New Years Eve, girls night, Valentine's Day (that red color, c'mon!), or pretty much any festive occasion.
I actually meant to add sprinkles to the rim, but I forgot. Guess I was too busy enjoying my cocktail!
Ingredients
This Raspberry Champagne Cocktail is so easy to make! Seriously, you only need three simple ingredients:
- Prosecco, Sparkling Wine, or Champagne
- Raspberry Syrup
- Fresh Raspberries
A Bellini is traditionally made with Prosecco, but since we're already getting creative here, feel free to use another sparkling wine or champagne instead.
I used Torani syrup to make this drink, however you can make your own syrup if you prefer. Check out the raspberry simple syrup recipe in my Raspberry French 75 recipe. It's really delicious and takes minutes to make. The color of the cocktail will be more subtle, though still beautiful.
The Torani syrup is very sweet, so make sure to use dry sparkling wine (look for brut or extra brut on the label). Otherwise, your cocktail will be too syrupy.
How to Make a Raspberry Bellini
This recipe is fast and easy to make! Here's a quick overview, but you'll find a printable recipe with more details at the end of this post.
- Start by adding four ounces of Prosecco, sparkling wine, or champagne to a flute glass.
- Next, add the raspberry syrup to taste, about ½ to 1 ounce. One ounce makes a fairly sweet cocktail, while ½ to ¾ ounce is less sweet. When testing this recipe, I preferred less syrup, but my husband liked it sweeter ... it's really a matter of your individual taste!
- Garnish with three fresh raspberries. They look so pretty floating in the drink, and they taste delicious when you get to the bottom, too!
Tip: You can get about six Raspberry Mimosas from one bottle of Prosecco.

The Bellini is a classic Italian cocktail that's made with Prosecco and peach puree.
While both are made with champagne or sparkling wine, Mimosas are prepared with orange juice, and Bellinis are made with peach puree. Because this drink is made with a different kind of juice, it really doesn't matter whether you call it a Raspberry Mimosa or a Bellini.
The Bellini was created by Guiseppe Cipriani, the founder of Harry's Bar in Venice, Italy. The color of the drink reminded Cipriani of a painting by Giovanni Bellini, hence the name.

Ingredients
- 4 ounces Prosecco (or sparkling wine)
- 1 ounce Torani Raspberry Syrup (or to taste; see note)
- 3 raspberries
Equipment

- Pour champagne into a glass.
