This easy Roasted Grape Tomatoes recipe is the perfect way to use up lots of small tomatoes ... or just a pint! It's ready fast, the recipe couldn't be simpler to make, and the end result is sooo tasty. Roasting brings out their tangy sweetness and gives the tomatoes a jammy texture that's absolutely irresistible.

Ingredients
This simple recipe uses minimal ingredients that you probably already have in your pantry! Here's what you'll need:
- Tomatoes - You'll need one pint of grape tomatoes (about two cups / 263 grams), although you can easily double or triple the recipe, as needed. Other types of little tomatoes, such as cocktail or cherry tomatoes, will also work great.
- Olive Oil - A light coating of extra virgin olive oil is essential for roasting and adds richness to the finished dish.
- Garlic - Fresh garlic pairs perfectly with the sweet tomatoes, adding another layer of savory flavor.
- Herbs - Don't skip the fresh herbs! They add the perfect burst of flavor to the finished dish. I had some thyme and rosemary on hand, so I used a combination, but other herbs (such as basil or oregano) would also work great.
- Salt + Pepper - For best results, use Kosher salt and fresh cracked pepper.

How to Roast Grape Tomatoes
This recipe couldn't be easier to make! You'll find a detailed recipe card below, but here's an overview of the steps:
- Mix tomatoes with olive oil, salt, and pepper. Tip: You can do this right on the baking sheet with clean hands.
- Roast the tomatoes until they start to soften. Once the tomatoes start to pucker, stir in the fresh garlic.
- Bake until most of the tomatoes have burst. The tomatoes should be softened and and browned in spots when they're done.
- Add fresh herbs. Remove the tomatoes from your oven, then mix in the fresh herbs.

These Baked Tomatoes are simple to make and even easier to customize! Here are a few ideas for changing up the recipe:
- Tomatoes - You can make this recipe with any kind of little tomato, including grape, cherry, and cocktail. Just keep in mind that they may need different cooking times, depending on their size and the thickness of their skin.
- Herbs - One of my favorite ways to experiment with this recipe is my switching up the herbs. Try fresh parsley, oregano, thyme, rosemary, and chives.
- Spicy - Add a little heat by stirring in some crushed red pepper flakes before roasting.
- Balsamic - Give the finished tomatoes an Italian touch by drizzling them with balsamic glaze right before serving.
- Cheese - Sprinkle on some feta, goat cheese, or even fresh mozzarella after they come out of the oven.
- Olives - Briny olives make the perfect partner for sweet, juicy tomatoes. Stir them in halfway through the baking process. Capers would also be delish!
How to Use
You may find it impossible not to gobble up these mouthwatering mini tomatoes straight from the oven! But if you can resist, you'll find there are lots of clever ways to use them below:
- Serve with crostini or crackers. Pair with homemade Crostini (or Garlic Crostini) like I did, or with Herb Parmesan Crackers or Pita Chips, and you have an amazing (and easy) appetizer. Add this Fried Feta too, and you have a party!
- Mix into dip. Give your dips a boost by stirring these soft, juicy tomatoes in before serving (or dollop them on top). They be delicious paired with Homemade Hummus or this Baked Ricotta. You can also use them to make this lovely Baked Feta Dip.
- Serve on a cheese plate. They'd make a wonderful addition to Cheese Plate or antipasto platter.

Roasted Grape Tomatoes
Ingredients
- 2 cups grape tomatoes (see note)
- 1 tablespoon extra virgin olive oil
- kosher salt
- freshly ground pepper
- 1 large clove garlic, minced
- 1 teaspoon minced fresh herbs (such as thyme, rosemary, or basil)
Equipment
Instructions
- Preheat oven to 425 degrees.
- Place tomatoes on a large baking sheet. Drizzle with oil, sprinkle generously with salt, and add a few grinds of pepper. Mix well.
- Bake the tomatoes for 10 minutes, then remove from oven. Sprinkle minced garlic over tomatoes, then gently stir.
- Return tomatoes to oven, then continue roasting until most tomatoes have popped and they're browned in spot (about 10 minutes).
- Remove tomatoes from oven, then sprinkle with fresh herbs and stir gently. Season with additional salt, if needed.
- Serve tomatoes warm or at room temperature. Enjoy!
