There are so many ways to enjoy fresh tomatoes, but this simple Tomato Toast is truly one of my favorites. This tasty sandwich is bursting with flavor, easily customizable, and the perfect way to show off summer produce with little to no effort.
You are going to love this no fuss recipe! The contrast between the raw, juicy tomatoes, chewy bread, and creamy ricotta topping is so delicious. And best of all, it's ready in minutes. Serve this summer toast for a low key lunch, dinner, even breakfast ... basically, anytime you get a craving (which I predict will be often)!

Ingredients
This recipe uses simple ingredients that you can find in any store. Here's what you'll need:
- Tomatoes - You'll want to use the freshest tomatoes possible for this recipe, preferably from the farmers market or your garden. Can't find those? Store bought tomatoes will work, as long as they are good quality and fresh tasting.
- Bread - Sourdough bread is ideal for this recipe, because it has a wonderful flavor and hearty texture. Any sturdy, artisan-style bread will work though.
- Ricotta - This recipe features a ricotta spread that's seasoned with fresh garlic, salt, and pepper. It adds a delicious, creamy layer that's a great counterpoint to the fresh, juicy tomatoes. Make sure to use full-fat ricotta for best results.
- Seasoning - You'll finish the recipe by seasoning the tomatoes with salt (I recommend using coarse Kosher salt), fresh cracked pepper, crushed red pepper flakes.

How to Make Tomato Toast
This homemade Toast with Tomatoes couldn't be easier (or faster) to prepare! You'll find a detailed recipe card below, but here's an overview of the steps:
- Make ricotta spread. Start by mixing together the ricotta and garlic, then season with salt and pepper to taste.
- Toast bread. Slice your bread about ¾ to 1-inch thick, then toast until light brown (or desired toasty-ness).
- Slice tomatoes. While the bread toasts, slice your tomatoes about ¼-inch thick. If they're super juicy, you may want to lightly blot them with a paper towel.
- Assemble sandwich. To assemble the tomato sandwich, spread the toasted bread with the ricotta mixture, then top with tomatoes. Sprinkle the tomatoes with salt, pepper, and crushed red pepper flakes to taste.

This is one of these recipes that's perfect as-is, but also super fun and easy to customize ... in fact, I rarely make it the same way twice! Here are some ideas to inspire you:
- Tomatoes - You can make this recipe with almost any variety of tomato, from cherry to heirloom. The only requirement is that they taste good. Roasted, grilled, or even fried tomatoes will work ... try topping it with my Roasted Grape Tomatoes recipe!
- Cheese - Different cheeses, and even cheese-based dips like this Blue Cheese Spread or this Whipped Goat Cheese, work great in this recipe. For an even faster sandwich, top the toast with sliced fresh mozzarella, or spread the bread with a creamy cheese, like goat, feta, cottage cheese, blue, cream cheese, or even Boursin.
- No Cheese - You can skip the cheese altogether for a vegan variation, or substitute another spread, like Hummus, mayo (regular or vegan), Pesto Mayonnaise, Classic Pesto, or homemade Romesco.
- Bread - Swap out the sourdough for another hearty artisan-style loaf. You could even use gluten free bread. Grilled bread would also be delicious!
- Roasted Garlic - Try replacing the fresh garlic with homemade Roasted Garlic for a mellower flavor.
- Lemon - Add a bright note by squeezing some fresh lemon over the top, or by mixing lemon zest or juice into the ricotta.
- Avocado - Turn this sandwich into an avocado toast by swapping mashed avocado or even Guacamole for the ricotta mixture.
- Herbs - Sprinkle fresh herbs, such as basil, oregano, thyme, chives, or dill, over the finished Tomato Toasts, or mix them into the ricotta.
- Everything Bagel Seasoning - One of my favorite ways of topping the tomatoes, is with a generous sprinkle of Everything but the Bagel Seasoning. Yum!
- Spicy - Craving some extra heat? Add more crushed red pepper flakes, or drizzle with your favorite hot sauce (I love this Secret Aardvark Sauce). A spoonful of Spicy Chili Crisp would be delish, too!

Storage
