Mexican Lasagna

This crowd-pleasing Vegetarian Mexican Lasagna is easy to make and has layers of savory, mouthwatering black beans, veggies, ricotta, and corn tortillas. YUM!!

INGREDIENTS: – 2 tsp. oil – mixed veggies – 1 can black beans – 1 can tomatoes w/chilies  – 16 oz. ricotta cheese – 2 cups shredded cheese – 1 large egg – 20 corn tortillas – Picante Sauce

STEP 1: Sauté onion and zucchini. Season with herbs and garlic, then mix in tomatoes, corn, and black beans.

STEP 2: While veggies are cooking, stir together ricotta, shredded cheese, and a large egg.

STEP 3: Add half the picante sauce to the bottom of a 9x16-inch pan.

STEP 4: Top picante sauce with a layer of tortillas and half the veggie mixture.

STEP 5: Top veggies with more tortillas, then spread ricotta filling over top.

STEP 6: Add another layer of tortillas, then the rest of the veggie mix. Top with more tortillas and the remaining picante sauce.

STEP 7: Cover with foil and bake until hot. Top with more cheese and continue baking until melted and lightly browned.

Serve with your favorite toppings:  - cilantro  - green onions  - olives  - avocado  - sour cream  - salsa  - and more!
