This crowd-pleasing Vegetarian Mexican Lasagna is easy to make and has layers of savory, mouthwatering black beans, veggies, ricotta, and corn tortillas. YUM!!
INGREDIENTS: – 2 tsp. oil – mixed veggies – 1 can black beans – 1 can tomatoes w/chilies – 16 oz. ricotta cheese – 2 cups shredded cheese – 1 large egg – 20 corn tortillas – Picante Sauce
Sauté onion and zucchini. Season with herbs and garlic, then mix in tomatoes, corn, and black beans.
While veggies are cooking, stir together ricotta, shredded cheese, and a large egg.
Add half the picante sauce to the bottom of a 9x16-inch pan.
Top picante sauce with a layer of tortillas and half the veggie mixture.
Top veggies with more tortillas, then spread ricotta filling over top.
Add another layer of tortillas, then the rest of the veggie mix. Top with more tortillas and the remaining picante sauce.
Cover with foil and bake until hot. Top with more cheese and continue baking until melted and lightly browned.
Serve with your favorite toppings: - cilantro - green onions - olives - avocado - sour cream - salsa - and more!
