Treat yourself to these easy Red, White, and Blue Popsicles on your fave patriotic holiday or any hot summer day!

  • 1/2 lb strawberries, roughly chopped
  • 2 - 3 tsp sugar, divided
  • 2/3 cup vanilla yogurt (substitute coconut yogurt to make vegan)
  • 8 oz fresh or frozen blueberries (thawed, if frozen)
  1. Combine strawberries and 1 - 2 tsp. sugar (depending on how sweet your berries are) in a food processor.
  2. Process until slightly chunky.
  3. Fill the popsicle molds 1/3 of the way full with blueberries.
  4. Freeze for 30 minutes.
  5. Top strawberries with vanilla yogurt. Molds will be 2/3 full.
  6. Freeze for 30 minutes.
  7. While popsicles are in freezer, combine blueberries and sugar in food processor.
  8. Pulse berries until almost smooth.
  9. Fill the remaining 1/3 of the popsicle molds with the blueberries.
  10. Place tops on popsicle molds.

  11. Freeze popsicles until solid, 3 to 4 hours. Enjoy!

My popsicle molds hold 1/3 cup each. You may get more or less popsicles depending on how big yours are.

I used a food processor to make my popsicles. If you don't have one, you can mash the berries up instead.
