Ingredients

For Oats:

  • 1 large orange
  • 1/2 cup old-fashioned rolled oats (not quick-cooking)
  • 1/4 cup milk*
  • 2 tsp dried cranberries
  • 1 tsp maple syrup
  • pinch salt

For Topping:

  • 2 tsp chopped pistachios
  • 1 tsp dried cranberries

Instructions

Prepare Oats:

  • Slice peel from orange. Over a bowl, use a knife to section the orange (see video for step by step tutorial). Save orange segments for topping the oats in the morning.
  • Squeeze leftover orange pulp to extract juice. You will need 1/4 cup juice for this recipe.
  • Combine oats, 1/4 cup orange juice, milk, cranberries, maple syrup, and salt in a jar.
  • Mix well, cover, and refrigerate oats overnight.

Add Toppings:

  • In the morning, remove oats from refrigerator and stir.
  • Serve oats topped with reserved orange segments, cranberries, and pistachios. Enjoy!

Notes

*Use nondairy milk to make this recipe vegan.
