1whole wheat english muffin
1slicecheese(I like Pepper Jack or Cheddar)
Spray a medium frying pan with nonstick spray and heat over medium heat.
When pan is hot, add veggie bacon. Cook until lightly browned on one side, then flip and cook until browned on other side.
Once bacon starts cooking, start toasting English muffin in toaster.
While bacon is cooking, crack egg in a small bowl and season with salt and pepper. Use a fork to beat egg until frothy. Set aside.*
Remove cooked bacon from pan; set aside until ready to assemble sandwich.
Return pan to heat and add egg. Using a spatula, quickly draw egg toward center of pan, shaping into a round egg "patty".
When egg is cooked on one side, flip and cook on the other side.
To assemble, place half an English muffin on a plate. Top with bacon, then add cooked egg and cheese. Top with remaining English muffin half.
Serve breakfast sandwich immediately. Enjoy!
If you want to make your sandwich with an over easy egg, crack your egg in a bowl, but don't beat it. Add it to the pan, then season with salt and pepper.
