  • nonstick cooking spray
  • 5 tablespoons unsalted butter, at room temperature
  • 2/3 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups flour
  • 3/4 teaspoon kosher salt
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1 1/2 cups chopped strawberries
  • 1 tablespoon flour
  • 1 cup mashed banana (about 2 medium bananas)
  • 1/2 cup + 2 tablespoons chopped walnuts or pecans, optional
  1. Preheat oven to 350 degrees. Spray a 9 x 5-inch bread pan lightly with nonstick spray; set aside.

  2. Mix butter and sugar until light and fluffy, using a stand mixer or hand mixer.

  3. Add eggs and vanilla; mix until fully incorporated.

  4. In a separate bowl, whisk together 1 1/2 cups flour, salt, baking soda, and baking powder.

  5. Using a spatula, fold flour into butter mixture, until almost completely mixed. Do not over mix; there should be a little flour still visible.

  6. Mix strawberries with 1 tablespoon flour.

  7. Add strawberries, banana, and 1/2 cup nuts to batter; gently fold in with a spatula.

  8. Add batter to bread pan. Smooth top and sprinkle with 2 tablespoons nuts.

  9. Bake bread for 50 to 60 minutes, or until a toothpick inserted in the center comes out mostly clean.

  10. Let bread cool completely before slicing. Enjoy!
