Ingredients

For Salad Dressing:

  • 2 tablespoons olive oil
  • 2 tablespoons rice vinegar
  • 2 tablespoons soy sauce (use tamari for gluten-free)
  • 1 tablespoon honey (use maple syrup for vegan)
  • 1 tablespoon sesame oil

For Salad:

  • 2 cups sugar snap peas cut into thirds
  • 2 medium carrots, thinly sliced
  • 2 green onions, thinly sliced
  • 1 (8-ounce) package baked tofu, cut into small cubes
  • 1 head romaine lettuce, chopped
  • 1 medium red pepper, chopped
  • 1/2 small head red cabbage, chopped
  • 1/4 cup chopped cilantro
  • 1 (11-ounce) can Mandarin oranges, drained
  • 1/4 cup sliced almonds

Instructions

Prepare Salad Dressing:

  • Combine olive oil, rice vinegar, soy sauce, honey, and sesame oil in a small bowl.
  • Whisk until well combined. Set aside.

Assemble Salad:

  • Place peas, carrots, onions, tofu, romaine, red pepper, cabbage, cilantro, and Mandarin oranges in a large bowl.
  • Pour salad dressing over vegetables and toss gently.
  • Serve salad sprinkled with sliced almonds. Enjoy!

Notes

When purchasing tofu, look for "Asian" or "Thai" flavors. If you're not a fan of tofu, it can be left out or even replaced with chicken.
