For Fries:
  • nonstick cooking spray
  • 2 large sweet potatoes
  • 3 tablespoons cornstarch
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons garam masala
  • 1 teaspoon salt
For Ketchup:
  • 1/2 cup ketchup
  • 2 teaspoons garam masala
  • 1/8 teaspoon cayenne
  1. Preheat oven to 425 degrees. Spray a large baking sheet with cooking spray and set aside.

Prepare Fries:
  1. Slice potatoes in half horizontally (no need to peel first), and then cut each half into slices about 1/2-inch thick.

  2. Cut the slices into fries about 1/2-inch wide, then place the fries in a large Ziplock bag.

  3. Sprinkle the fries with the cornstarch. Seal the bag and shake until the fries are evenly coated with cornstarch.

  4. Open bag. Drizzle fries with olive oil and sprinkle with garam masala and salt.
  5. Close the bag again and shake until fries are evenly coated.
  6. Place fries in a single layer on the baking sheet, then bake for 15 - 20 minutes or until fries are browned on one side.

  7. Flip fries, then bake for another 15-20 or until browned on the second side.

Prepare Ketchup:
  1. While the fries are cooking, mix together ketchup, garam masala, and cayenne. Set aside.

To Serve:
  1. Remove fries from oven and season to taste with additional salt, if desired.
  2. Serve fries immediately with ketchup. Enjoy!
