  • 2 teaspoons extra virgin olive oil
  • 1 medium onion, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon crushed red pepper flakes
  • 3 cloves garlic, crushed or minced
  • 8 cups vegetable broth
  • 1/2 cup brown rice
  • 1 cup frozen peas
  1. Heat olive oil over medium-high heat in large soup pot.
  2. Add onion, salt, and red pepper flakes to oil.
  3. Cook onion, stirring occasionally, until softened and starting to brown (about 5 minutes).
  4. Mix in garlic and cook for a few seconds, stirring constantly.
  5. Add broth and rice to pot, then cover and bring to a boil.

  6. Reduce heat to a simmer, cover pot partially with lid, and cook until rice is tender, about 35 to 40 minutes.

  7. Stir in peas and cook until heated through, about 1 minute.
  8. Season to taste with salt and serve hot. Enjoy!
