Treat yourself to this delicious Lemon-Garlic Edamame Dip!
Place edamame in a microwave-safe container and add 3 tablespoons water.
Cover and microwave edamame for 7 minutes, stirring twice. Drain edamame and allow to cool slightly before proceeding.
Add edamame, beans, lemon juice, olive oil, salt, and paprika to food processor, as well as 1/4 cup water.
Season to taste with additional salt, if desired.
If your food processor is small, I'd recommend preparing the dip in two batches. It will be easier to blend and get smoother.
