Ingredients

  • nonstick baking spray
  • 2 cups old-fashioned rolled oats (not instant)
  • 1/4 cup lightly packed brown sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 2 cups milk
  • 2 large eggs, beaten
  • 1 teaspoon vanilla extract
  • 2 cups blueberries
  • 1 large banana, sliced
  • 1/2 cup chopped walnuts

Instructions

  • Preheat oven to 350 degrees. Spray a 9 x 9-inch baking pan with nonstick spray; set aside.
  • Stir together oats, brown sugar, cinnamon, baking powder, and salt.
  • Whisk together milk, eggs, and vanilla extract in a separate bowl.
  • Add milk mixture to oats, then mix well. Set aside.
  • Cover bottom of baking pan with blueberries, then bananas, and finally, the nuts ... reserving a little of each for topping the oatmeal.
  • Pour oat mixture over fruit and nuts, spreading evenly across pan. Sprinkle top with reserved blueberries, bananas, and nuts.
  • Bake oatmeal for 40 to 45 minutes, or until set and lightly browned.
  • Serve oatmeal plain or with yogurt and fresh fruit. Enjoy!

Notes

Feel free to substitute the blueberries and bananas with an equal amount of your favorite fruit.
