White Chocolate Cranberry Cookies

Servings: 30 small cookies
- 12 tablespoons unsalted butter
- 3/4 cup brown sugar, lightly packed
- 1/2 cup granulated sugar
- 2 teaspoons vanilla extract
- 1 teaspoon salt
- 1 large egg
- 2 cups flour
- 1 teaspoon baking powder
- 1 cup white chocolate chips
- 3/4 cup chopped walnuts
- 3/4 cup dried cranberries
Melt butter in a small pan over medium heat.
Add butter to a mixing bowl, along with sugars, vanilla, and salt. Using a mixer, mix for a couple minutes or until smooth and shiny. Beat in egg.
Whisk together flour and baking powder, then add to butter mixture. Mix until completely combined.
Blend in chocolate, walnuts, and cranberries.
Roll heaping tablespoons of dough into balls and place on a greased baking sheet about 2 inches apart.
Flatten cookie balls slightly, then refrigerate cookies for at least one hour.
Preheat oven to 375 degrees.
Bake cookies for 15 minutes or until browned on the bottom and lightly colored on top.
Remove cookies from oven and cool on a rack.
Eat cookies right away or store in an airtight container. Enjoy!
