Ingredients
For Pasta:

ounces
fusilli or rotini
For Kale:

bunches
kale,
roughly chopped

tablespoon
extra virgin olive oil
½
teaspoon
salt
For Dressing:
1
lemon
1
(6-ounces) container
Greek yogurt
¼
cup
chopped basil
1
tablespoon
extra virgin olive oil
1
teaspoon
salt
¼
teaspoon
freshly ground pepper
1
cloe
garlic,
minced
For Salad:
1
(15-ounce) can
white kidney beans,
drained and rinsed
⅓
cup
sliced sundried tomatoes
⅓
cup
chopped kalamata olives
Instructions
Prepare Pasta:
Bring a large pot of well salted water to a boil.
Add pasta to water and cook until al dente.
Drain pasta, then rinse with cool water. Set aside to drain well.
Prepare Kale:
Place kale in a large bowl. Drizzle with 1 tablespoon olive oil and sprinkle with salt.
Massage olive oil and salt into kale with your hands for about 2 minutes, or until kale is well coated and slightly softened. Set aside.
Prepare Dressing:
While pasta is cooking, zest the lemon, then mince the zest. Juice the lemon, as well.
Whisk the zest and juice together with the remaining dressing ingredients (yogurt through garlic) until well combined.
Assemble Salad:
Mix pasta, beans, tomatoes, and olives into kale.
Add dressing to kale mixture and toss until well combined.
Serve salad immediately or refrigerate until ready to eat. Enjoy!
