Ingredients

pint
grape tomatoes
⅓
cup
Kalamata olives
halved

tablespoon + 2 teaspoons
extra virgin olive oil,
divided

large cloves
garlic,
minced

teaspoon
dried oregano

crushed red pepper flakes
salt

(8-ounce) block
feta cheese,
cut in half

lemon wedge

tablespoon
chopped Italian parsley
crackers,
for serving
Instructions
Preheat oven to 400 degrees. Lightly oil a medium skillet.
Mix tomatoes, olives, 1 tablespoon olive oil, garlic, oregano, and red pepper flakes in a medium bowl. Season lightly with salt to taste.
Place tomato mixture in skillet. Top with feta, then drizzle feta with remaining 2 teaspoons olive oil.
Bake feta until tomatoes have softened, and feta is hot and starting to brown on edges (about 30 minutes).
Squeeze lemon over feta, then sprinkle with parsley.
Serve feta hot with crackers. Enjoy!
