⅔cupvanilla yogurt(substitute coconut yogurt to make vegan)
8ouncesfresh or frozen blueberries(thawed, if frozen)
Instructions
Combine strawberries and 1 - 2 tsp. sugar (depending on how sweet your berries are) in a food processor.
Process until slightly chunky.
Fill the popsicle molds ⅓ of the way full with blueberries.
Freeze for 30 minutes.
Top strawberries with vanilla yogurt. Molds will be ⅔ full.
Freeze for 30 minutes.
While popsicles are in freezer, combine blueberries and sugar in food processor.
Pulse berries until almost smooth.
Fill the remaining ⅓ of the popsicle molds with the blueberries.
Place tops on popsicle molds.
Freeze popsicles until solid, 3 to 4 hours. Enjoy!
Notes
My popsicle molds hold ⅓ cup each. You may get more or less popsicles depending on how big yours are.I used a food processor to make my popsicles. If you don't have one, you can mash the berries up instead.
