Ingredients
1
(16-ounce) package
frozen shelled edamame
2
cloves
garlic,
peeled
1
(15-ounce) can
cannellini beans,
drained and rinsed
1
lemon,
juiced
1
tablespoon
olive oil
1 ½
teaspoons
salt
1
teaspoon
smoked paprika
For Serving:
vegetables
crackers
Instructions
Place edamame in a microwave-safe container and add 3 tablespoons water.
Cover and microwave edamame for 7 minutes, stirring twice. Drain edamame and allow to cool slightly before proceeding.
Place garlic cloves in food processor and pulse until minced.
Add edamame, beans, lemon juice, olive oil, salt, and paprika to food processor, as well as ¼ cup water.
Process mixture until smooth, stirring occasionally, and adding additional water if needed.
Season to taste with additional salt, if desired.
Notes
If your food processor is small, I'd recommend preparing the dip in two batches. It will be easier to blend and get smoother.
