Ingredients
For Raspberry Simple Syrup:
1cupsugar
1cupwater
6ouncesfresh raspberries(about 1 ½ cups)
For Cocktail:
lemon
1 ½ouncesgin
1tablespoonlemon juice
1tablespoonraspberry simple syrup
dry sparkling wine
raspberries for garnish
Instructions
Prepare Raspberry Simple Syrup:
Combine sugar, water, and raspberries in a medium saucepan over medium heat.
Bring to a simmer, stirring often, then reduce heat to medium-low. Continue cooking at a low simmer for 5 minutes, stirring occasionally.
Remove from heat and let cool slightly.
Place a fine mesh strainer over a small bowl, then pour in syrup. Press with the back of a spoon, getting as much liquid as possible through strainer.
Discard seeds, then chill syrup until cool.
Prepare Cocktail:
Remove rind from lemon in a long strip. Slice rind thinly (keeping it in a long strip), then set aside.
Fill a cocktail shaker with ice.
Add gin, lemon juice (from lemon), and simple syrup to shaker. Shake until chilled.
Strain mixture into a champagne glass.
Top off glass with champagne. Garnish with lemon rind and a fresh raspberry.
Serve immediately. Enjoy!
Notes
The Raspberry Simple Syrup recipe yields about 1 ½ cups. Use the leftovers in other cocktails, mixed with seltzer for a mocktail, or added to lemonade.Even with the simple syrup, this drink isn't very sweet. I like that personally, but if you'd like a sweeter, slightly less strong drink, add a little extra raspberry simple syrup.
