Stir together tahini, lemon juice, and garlic in a medium bowl.
Mix in just enough water—1 tablespoon (or less) at a time—to reach a drizzling consistency (about 2 to 3 tablespoons total).
Season generously to taste with salt (about ½ to ¾ teaspoon), plus a few grinds peppers.
Serve immediately, or store in refrigerator until ready to eat. Enjoy!

Tahini has a tendency to separate.
