Cut avocado into chunks, then add to food processor, along with sour cream, lime, juice, and salt.
Puree ingredients until sauce is totally smooth.
Taste, then season with additional salt and / or lime juice, if desired.
Serve immediately, or store in an airtight container in your refrigerator. Enjoy!

This recipe makes about 1 cup of crema, or 8 servings (2 tablespoons each). However, the yield will vary depending on the size of your avocados.Avocados must be ripe, or the sauce will not blend properly. To tell if an avocado is ripe, give it a gentle squeeze. Ripe avocados will have a little give (similar to a peach), while unripe avocados will be quite firm. You can also check under the stem, if it's still intact. If the avocado is light green under the stem, that's another good sign that your avocado is ripe.
