Separate pumpkin seeds from pulp, then transfer to a baking sheet. Let dry for at least 30 minutes.
Drizzle 1 cup pumpkin seeds with 1 tablespoon olive oil, then add salt to taste. Mix well. (If your Cajun seasoning already contains salt, you may not need any extra.)
Bake seeds for 10 minutes, mixing after 5 minutes.
After the seeds have roasted for 10 minutes, stir in 2 to 3 teaspoons Cajun seasoning (to taste).
Continue roasting seeds, stirring every five minutes, until they're toasted and crisp throughout (about 10 to 15 more minutes).
Let seeds cool before eating. Enjoy!
Notes
Servings - This recipe makes 1 cup, or 16 servings (1 tablespoon each)Scaling the Recipe - A pie / sugar pumpkin will yield about ½ to 1 cup seeds (depending on size), and you'll get many more from a jack-o'-lantern style pumpkin. You can scale this recipe up (or down), depending on how many seeds you have. Just measure the seeds, then double or triple the oil and Cajun seasoning accordingly.Baking Tips - For the crunchiest seeds, spread the seeds in a single layer on your baking sheet (with a little space between the seeds). When roasting lots of seeds, it's better to use two sheet pans. And make sure to stir the seeds every five minutes (set your timer). Stirring helps the seeds bake evenly, ensuring that each one get crispy.Air Fryer - Cook the oiled and seasoned seeds at 350° F (175° C) for about ten to fifteen minutes, stirring every 5 minutes.More - Read the info before this recipe card for helpful tips, recipe variations, and more pumpkin seed recipes!
