Ingredients
For Pasta:

ounces
linguine
4 ½ cups
vegetable broth
1
(15-ounce) can
fire roasted tomatoes

medium
onion,
thinly sliced
⅓
cup
Kalamata olives
halved

cloves
garlic,
thinly sliced
2
tablespoons
extra virgin olive oil
1
teaspoon
basil
1
teaspoon
oregano
¼
teaspoon
crushed red pepper flakes
For Topping:
4
ounces
feta cheese,
crumbled*

large
basil leaves,
thinly sliced
salt
pepper
Instructions
Combine all ingredients (except feta, basil leaves, salt, and pepper) in a large pot such as a dutch oven. Mix well.
Cover pot and bring to a boil, then reduce heat to a simmer.
Cook pasta covered for about 10 minutes or until al dente, stirring occasionally.
Remove pasta from heat, then stir in feta and basil. Season to taste with salt and pepper.
Serve pasta immediately. Enjoy!
Notes
*To make this recipe vegan, skip the Feta Cheese.
