sliced ¼-inch thick
2
ounces (57 grams)
feta cheese,
crumbled (about ¼ cup)
1
tablespoon
extra virgin olive oil
1
teaspoon

kosher salt
pepper
2
cups
spring mix
Equipment
Baking Sheet
Instructions
Preheat broiler with oven rack in top position.
Cut baguette in half lengthwise, then place on a baking sheet (cut side up).
Blot tomato slices with a paper towel to remove excess liquid. Then arrange on both sides of baguette.
Top tomatoes with crumbled feta cheese.
Broil sandwich until feta is hot, softened, and golden brown in spots. (About 2 to 5 minutes depending on oven. Watch closely.).
While sandwich cooks, whisk together vinegar, olive oil, a pinch of salt, and couple grinds of pepper.
Add spring mix to dressing and toss until coated. Taste, then season with additional salt, if needed.
Top half of the hot sandwich with spring mix, then carefully (but quickly) close the sandwich. Tuck in any bits of feta or salad that fall out.
Cut sandwich in half, then serve immediately. Enjoy!
