Add olive oil, lemon juice, honey, salt, and pepper to a jar (or bowl).
Cover jar and shake vigorously until ingredients are combined and dressing looks thick and creamy (or whisk together if using a bowl).
Taste dressing, then adjust seasoning with additional honey, salt, and / or pepper, if desired.
Use vinaigrette immediately or store in your refrigerator for up to 5 days. Enjoy!

Servings - This recipe makes about ¾ of a cup, plus 2 tablespoons of dressing, which is equal to 7 servings (2 tablespoons per serving). If you use less than 2 tablespoons honey, the yield will be slightly smaller. If you use more than 2 tablespoons honey, you'll get a little more dressing.Types of Honey: Feel free to use your favorite honey for this recipe! There are many different varieties, and each one will give the dressing a unique taste. Look for raw honey at your local farmers market for a truly unique flavor!Amount of Honey: You can adjust the amount of honey from one tablespoon (just a touch of sweetness, more tangy) up to four tablespoons (more sweet, less tangy). I recommend starting with two tablespoons, which will give the vinaigrette a lightly sweetened lemony flavor.Salt - I developed this recipe using kosher salt. If you're using regular table salt, make sure to add it to taste.
