Combine oats, milk, coconut, maple syrup, vanilla, and salt in a mason jar (or small bowl). Add half the mango and half the macadamia nuts. Mix well.
Top with remaining mango and nuts, plus an additional pinch of coconut (if desired).
Cover and refrigerate overnight (or at least four hours) before eating. Enjoy!

Mango Tips - One mango will yield enough fruit for about two servings of this recipe. To test if a mango is ripe, press it gently. The flesh should a little give when you squeeze it (similar to peaches or avocados). If you purchase an unripe mango, let it ripen on your counter for a few days before using.Best Milk - Any kind of milk works here, although 2% or whole will give you the creamiest results. For vegan oats, use plant based milk (such as almond, oat, coconut, or soy milk). Multiple Servings - To make multiple servings at one time, line up jars on your counter.
