Combine shallot and vinegar in a jar or in a bowl. Let sit for at least 15 minutes.
Add olive oil, maple syrup, salt, and pepper to shallot.
Cover jar and shake ingredients together (or whisk) until well blended.
Season to taste with additional salt and pepper, if desired.
Serve immediately or refrigerate until ready to use. Enjoy!
