Ingredients

unsalted butter

extra virgin olive oil

diced shallots
(about 4 small shallots)

mushrooms,
sliced
1
clove
garlic,
minced

flour

vegetable broth
salt
pepper
Instructions
Heat butter and olive oil in a large frying pan over medium heat until hot.
Add shallots to pan and season with a little salt and pepper. Saute until tender, stirring often (about 5 minutes).
Stir in mushrooms. Cook until mushrooms and shallots are browned, stirring frequently (about 15 to 20 minutes).
Add garlic and cook until fragrant, stirring constantly (about 30 seconds). Season with salt and pepper.
Sprinkle flour over mushrooms, then mix until incorporated. Continue cooking, stirring constantly, for about 2 minutes.
While whisking, slowly pour in vegetable broth. Continue whisking until all ingredients are well combined.
Simmer gravy until thickened, stirring frequently (about 5 to 10 minutes). Remove from heat and season to taste with salt and pepper.
Serve gravy hot. Enjoy!
Notes
*To Make Vegan Gravy:
substitute butter with your favorite vegan butter substitute OR use all olive oil.
