Peel and core the pineapple, then chop into chunks.
Add the chopped pineapple to your blender. Puree until smooth (about 1 to 2 minutes, depending on your blender). Stop and stir, if needed.
Place a fine mesh strainer over a medium bowl. Add the pureed pineapple, then use a spatula to stir the puree and press on the pulp, extracting as much juice as possible. (Note: This step is optional, and the juice can also be served unstrained.)
Serve juice immediately or chill until ready to drink. Enjoy!
Notes
Where to Find Pink Pineapples - Pinkglow pineapples are produced by Del Monte, and they are only available in the mainland U.S. and Canada. Look for them at local grocery stores (this store locator is helpful) for the best price, or purchase them online. Servings - The amount of servings will vary depending on your pineapple's size, and whether you serve the juice strained or unstrained. My pineapple yielded 6 cups of chopped pineapple, which produced 4 cups unstrained juice or about 2 ⅓ cups strained juice.
