Preheat oven to 350° F (175° C). Line a large baking sheet with parchment paper or nonstick foil, then set aside.
Stir oats, pepitas, pumpkin spice, and salt together in a large mixing bowl.
In a separate, smaller bowl, mix olive oil, maple syrup, and vanilla together with a fork (or whisk) until well combined.
Pour maple syrup mixture over oat mixture, then stir until oats are well coated.
Spread oat mixture over prepared baking sheet in an even layer.
Bake granola until golden and crisp, stirring every 10 minutes (about 20 to 25 minutes total).
Let granola cool completely, then store in an airtight container until ready to eat. Enjoy!
