Preheat oven to 350°F (175°C). Spray an 8x8-inch baking dish with nonstick cooking spray. Set aside.
Stir together oats, cinnamon, baking powder, and salt in a large bowl.
Mix in milk, eggs, maple syrup, and vanilla extract.
Add strawberries and walnuts, then mix well.
Transfer mixture to prepared baking dish, then bake until top is lightly browned and oats are set (about 40 to 45 minutes).
Serve baked oatmeal hot or warm. Enjoy!

For best results, use 2% or whole milk. Plant based milks also work great (I typically use unsweetened soy milk).Serve plain or topped with yogurt, fresh fruit, and / or nuts.
