Treat yourself to this scrumptious homemade Strawberry Sauce ... it's super easy to make and perfect for topping everything from ice cream to pancakes!
Combine sugar and water in a medium pot over medium heat.
Cook, stirring constantly, until sugar is dissolved (about 3 to 4 minutes).
Raise the heat to medium high, then add the strawberries, lemon juice, and salt. Bring mixture to a boil, then reduce heat to a simmer, stirring frequently.
Simmer mixture until strawberries are tender and have released their juices (about 7 to 10 minutes). Do not overcook or berries will fall apart.
Serve compote warm or chilled over ice cream, cheesecake, pancakes, and more. Enjoy!

This recipe makes about 1 ½ cups of sauce, or 6 servings (¼ cup each).I prefer to halve or quarter the berries for a chunky texture. However, you can chop the berries if you'd prefer a finer texture. You can also mash the finished sauce a bit for a more uniform texture.This is a fairly thin sauce, however you can thicken it with a cornstarch slurry if you prefer. When the sauce has finished cooking, whisk together 1 tablespoon cornstarch and 2 tablespoons water.
