Crumble goat cheese over arugula.
Layer sliced tomato over goat cheese.
Drizzle tomatoes with olive oil, then sprinkle with Herbes de Provence. Season generously with salt and pepper.
Close sandwich, then gently press together. Cut in half crosswise.
