    This tasty French Sandwich recipe uses simple ingredients:

    • Baguette - You'll need a baguette, of course! I used a demi baguette, but half a regular-sized baguette will also work. For best results, pick one up from your local bakery, but if that's not an option, these take and bake baguettes are delish.
    • Arugula - Peppery arugula adds a lovely flavor and texture to the finished sandwich.
    • Tomato- Use the best tomatoes you can find for this recipe. I like to use heirloom tomatoes when they're in season.
    • Cheese - You'll also need some goat cheese. The logs you can find in most stores work great, although other varieties will also work. If you're not a goat cheese fan, check out the Variations below for substitution ideas.
    • Seasoning - This finishing touch is a sprinkle of Herbes de Provence (learn more about this delicious herb mixture below), along with a drizzle of extra virgin olive oil and a little salt and pepper.
    PRO TIP: This sandwich is seasoned with Herbes de Provence, a dried herb mixture that is frequently used in the Provence region of southeastern France. While each recipe is a little different, the mix often contains savory, marjoram, rosemary, thyme, oregano, and lavender buds. This fragrant and flavorful herbal blend gives the sandwich its unique flavor!

    How to Make a Vegetarian Baguette Sandwich

    This tasty tomato and goat cheese sandwich couldn't be easier to make! You'll find a detailed recipe card below, but here's an overview of the steps:

    1. Add arugula. Split a demi baguette in half, then top with the arugula. Tip: If you can't find a demi, you can also use half a standard baguette.
    2. Top with cheese. Crumble the goat cheese over the greens.
    3. Layer on tomatoes. Thinly slice half a tomato, then place the slices on the cheese.
    4. Season. Drizzle the tomato with a little olive, then season with Herbes de Provence, salt, and pepper. Close the sandwich, press down gently, then cut in half crosswise.

    Ingredients

    • 1 demi baguette
    • large handful arugula
    • 2 ounces (57 grams) goat cheese
    • ½ large tomato, thinly sliced
    • 1 teaspoon extra virgin olive oil
    • ½ teaspoon Herbes de Provence
    • kosher salt
    • pepper

    Instructions

    • Cut baguette in half lengthwise. Top one half with arugula.
    • Crumble goat cheese over arugula.
    • Layer sliced tomato over goat cheese.
    • Drizzle tomatoes with olive oil, then sprinkle with Herbes de Provence. Season generously with salt and pepper.
    • Close sandwich, then gently press together. Cut in half crosswise.
    • Serve immediately. Enjoy!

    Notes

    If you can't find a demi baguette, you can use half a regular baguette instead.
