Instructions
Preheat oven to 350°F (175°C). Spray an 8x8-inch baking dish with nonstick cooking spray. Set aside.
Stir together oats, baking powder, and salt in a large bowl.
Mix in milk, eggs, maple syrup, vanilla extract, and lemon zest. (Save lemon juice for another use.)
Add berries and nuts. Mix well.
Transfer mixture to prepared baking dish, then bake until oats are set and top is lightly browned (about 40 to 45 minutes).
Serve oatmeal bake hot or warm. Enjoy!

Choose your favorite berries for this recipe! I did a combination of strawberries, raspberries, and blueberries this time. However, you can use just one kind of berry, or you can add a mixture of two, three, or even four.Serve the Baked Oatmeal plain or topped with yogurt, fresh fruit, or nuts.
