    My refrigerator has been overflowing with raspberries, strawberries, blackberries, and blueberries lately. I'm in a major berry phase, and I just can't seem to get enough.

    I especially crave fresh berries at breakfast time! They're so tasty paired with oats, and I love them in cozy bowls of hot oatmeal and my go-to overnight oats recipe. But this delicious Mixed Berry Baked Oatmeal is my new fave.

    If you're a berry lover too, you need to try these yummy Baked Oats! This simple recipe is made with basic, healthy ingredients, and it works with pretty much any berry, so choose your favorites. I used a combo, but you can prepare this breakfast dish with a single berry, or change things up every time you make it, depending on what's in your fridge.

    Oatmeal Bakes are the ultimate no fuss breakfast recipe ... you just stir a few healthy ingredients together, bake, and enjoy. So easy and so versatile. Serve the oatmeal for a lazy weekend brunch, or make a batch on Sunday, then enjoy a hot, hearty breakfast all week long!

    Ingredients

    This Baked Oats recipe calls for simple, easy to find ingredients! Here's what you'll need:

    • Berries - Of course, you'll want to gather some fresh fruit, and strawberries, blueberries, raspberries, and blackberries all work really well. You can easily customize the recipe by using a combination of berries, or just a one type ... it's up to you!
    • Oats - You'll need old fashioned rolled oats for this breakfast bake. Avoid using instant oats and steel cut oats, because they absorb liquids differently and don't have the same cooking time.
    • Nuts - Chopped nuts give the oatmeal a wonderful flavor and texture. I used walnuts this time, but pecans and other nuts may also be used. Feel free to skip the nuts if you're out, or if you have an allergy.
    • Lemon - This recipe calls for fresh lemon zest, which brightens up the oatmeal casserole and pairs so well with the fruit.
    • Maple Syrup - You'll use maple syrup to naturally sweeten the recipe.
    • Vanilla - A little vanilla extract adds another layer of warm, cozy flavor to the recipe.
    • Milk - For best results, choose 2% or whole milk. You can also use unsweetened plant based milks ... I usually make this recipe with my fave soy milk.
    • Eggs - You'll need two large eggs, which are used bind the other ingredients together.
    • Leavener - Baking Powder helps the oats rise as they cook, lightening the overall texture of the bake.
    • Salt - A bit of kosher salt to pull all the flavors together.

    This recipe is naturally vegetarian and gluten free! If you have an allergy, always read all labels carefully and make sure to use specifically marked GF oats to avoid cross-contamination. For a vegan / dairy free option, use plant based milk and skip the eggs, or use a vegan egg replacement.

    You'll Also Need

    You'll need a small bowl to lightly beat the egg, as well as a large bowl to mix the oatmeal ingredients together. A microplane zester is a really useful tool for zesting the lemon. To bake the oats, you'll use an 8 x 8-inch square baking dish. This Emile Henry Square Baker is my favorite ... it's looks lovely on the table, and it's easy to clean!

    How to Make Berry Baked Oatmeal

    This delicious Berry Oatmeal couldn't be easier to make! You'll find a detailed recipe card below, but here's an overview of the steps:

    1. Combine dry ingredients. Start by mixing together the rolled oats, baking powder, and salt.
    2. Add wet ingredients + berries. Next, you'll mix in the milk, eggs, maple syrup, lemon zest, and vanilla extract. When everything is well-combined, stir in the berries and chopped nuts. Tip: I like to reserve a few nuts and berries to decorate the top. You could even add some of these cute strawberry hearts!
    3. Transfer to a baking dish. Spray your baking dish with nonstick spray, then add the berry-oat mixture.
    4. Bake. Cook the oats until the center is set, and the top is lightly browned.

    And that's all there is to it ... time to dig into your homemade Berry Baked Oatmeal!

    Variations

    These comforting Baked Oats are super easy to customize! Here are a few ideas to try:

    • Frozen Fruit - Feel free to substitute frozen berries for the fresh.
    • Other Fruits - Combine the berries with peaches, cherries, bananas, mango, apples, or other fruits.
    • Nuts - I used walnuts for this recipe, but other nuts (such has pecans, almonds, pistachios, etc.) will also work great. You can skip the nuts, or substitute your favorite seeds too, if you prefer.
    • Spices - For a more traditional flavor, leave out the lemon zest and add a teaspoon of ground cinnamon instead. Other warm spices, like ginger, cardamom, cloves, nutmeg, or allspice would also be tasty.
    • Vegan + Dairy Free - For a vegan / dairy free version, use unsweetened plant based milk (this soy milk is my favorite) and skip the eggs (or use a vegan egg replacement).
    • Gluten Free - Oats are naturally gluten free, so if you don't have an allergy any variety should work. If you do have a sensitivity, choose specifically marked GF oats to avoid cross-contamination (and read all other labels carefully).
    • Cups - You can make single servings of this recipe by baking it in a nonstick muffin pan (or easy-to-clean silicone cups). Make sure to spray the cups well with nonstick spray, fill about ¾-full, and watch them closely as they bake (baking time will be about 10 to 15 minutes shorter).

    Serving Suggestions

    As you can probably tell from the photos, this Baked Berry Oatmeal has a different consistency than regular stovetop oatmeal! It's closer to a firm, bread pudding than the creamy porridge you may be used to.

    Serve the oats hot, either plain or piled with toppings! A dollop of yogurt and extra fresh berries or nuts is always delicious, and some people even like to add a little milk. This recipe is lightly sweetened. If you find yourself craving more sweetness, drizzle maple syrup of honey over the top, or sprinkle the oats with a little brown sugar.

    Storage

    If you have leftovers, store them in an airtight container in your refrigerator, where they'll stay fresh for up to four days. Rewarm gently in your microwave before serving. The oats may also be frozen. I recommend dividing the bake into individual portions before freezing. That way, you can simply pull out a single serving.

    This Mixed Berry Oatmeal Bake is an ideal make ahead breakfast! Make a batch on Sunday, then enjoy your cozy meal prep breakfast all week long.

    Ingredients

    • nonstick cooking spray
    • 2 cups old fashioned rolled oats
    • 1 teaspoon baking powder
    • ½ teaspoon kosher salt
    • 2 cups milk
    • 2 large eggs, lightly beaten
    • ¼ cup maple syrup
    • 1 teaspoon vanilla extract
    • 1 medium lemon, zested
    • 2 to 3 cups mixed berries (such as strawberries, raspberries, blueberries and / or blackberries)
    • ½ cup chopped walnuts

    Equipment

    • 8 x 8-inch Baking Dish

    Instructions

    • Preheat oven to 350°F (177°C). Spray an 8x8-inch baking dish with nonstick cooking spray. Set aside.
    • Stir together oats, baking powder, and salt in a large bowl.
    • Mix in milk, eggs, maple syrup, vanilla extract, and lemon zest. (Save lemon juice for another use.)
    • Add berries and nuts. Mix well.
    • Transfer mixture to prepared baking dish, then bake until oats are set and top is lightly browned (about 40 to 45 minutes).
    • Serve oatmeal bake hot or warm. Enjoy!

    Notes

    Choose your favorite berries for this recipe! I did a combination of strawberries, raspberries, and blueberries this time. However, you can use just one kind of berry, or you can add a mixture of two, three, or even four.
    Serve the Baked Oatmeal plain or topped with yogurt, fresh fruit, or nuts. For sweeter oats, sprinkle with a little brown sugar or drizzle with maple syrup or honey before serving.
    Use the leftover lemon juice to make a glass of lemonade or this Lemon Salad Dressing.

    This recipe is delicious!! I replaced the milk with a can of full fat coconut milk and increased the 100% organic maple syrup from 1/4 C to 1/2 C. Sprinkled a little organic maple sugar over the top.
