Preheat oven to 425°F (220°C). Spray a large baking sheet with nonstick spray, or line with parchment paper (or nonstick foil).
Arrange pepper halves on baking sheet. Set aside.
Mix together cream cheese, feta, garlic, and dill. Season to taste with salt and pepper, then fill pepper halves with mixture.
Combine panko and olive oil. Season to taste with salt and pepper.
Sprinkle stuffed peppers with panko. Bake peppers for 20 to 25 minutes, or until peppers are hot and panko is lightly browned.
Serve peppers immediately. Enjoy!
Notes
Peppers - Look for bags of mini sweet peppers (mini bell peppers) in the produce section of your grocery store. The number of peppers in each bag will vary slightly, depending on their size. My bag had 18 peppers, which made 36 peppers halves.Make Ahead - To prep the stuffed peppers for a party, make the filling and stuff the peppers in advance, then cover and refrigerate them. Stir the panko topping together, and sprinkle it over the peppers, just before baking.
