Add chopped mango to a food processor (or blender), along with the maple syrup, if using.
Puree mango until smooth, stopping to scrape down sides of bowl, as needed.
Use puree immediately or refrigerate (or freeze) until ready to eat. Enjoy!
Notes
The amount of puree you'll get will vary depending on the size of your mangos. I used one large mango, which weighed 12 ounces (340 grams). This yielded ¾ cup puree, or 6 servings (2 tablespoons each).You can make this recipe with as many mangos as you would like. Feel free to double, triple, etc.Puree can be thinned with water, if needed.
