Combine mango, sugar, water, lime juice, and salt in a food processor (or blender). Puree until totally smooth.
Refrigerate mango mixture for at least two hours before proceeding.
Add mango mixture to your ice cream maker and process according to the machine's instructions until thickened and frozen. The finished texture should be similar soft serve, and it should take about 10 to 20 minutes.
Eat sorbet immediately or freeze in an airtight container. Enjoy!
