Ingredients
nonstick cooking spray
For Potatoes:
4
large yellow potatoes
3
tablespoons
extra virgin olive oil

Old Bay Seasoning

lightly packed parsley leaves,
chopped
For Dipping Sauce:

mayonnaise

cup
ketchup

Instructions
Preheat oven to 450 degrees. Spray a baking sheet with nonstick cooking spray.
Prepare potatoes:
Cut potatoes in half lengthwise, then cut halves into wedges.
Place wedges in a resealable plastic bag. Drizzle with olive oil and sprinkle with Old Bay and salt.
Reseal the bag and shake until potatoes are evenly coated.
Transfer potatoes to baking sheet.
Place potatoes in oven and bake for 15 minutes.
After 15 minutes, flip potatoes and return to oven. Bake an additional 15 minutes or until potatoes are deep golden brown on both sides.
Remove potatoes from oven, then season to taste with additional salt and Old Bay, if desired.
Toss potatoes with parsley.
Prepare dipping sauce:
While potatoes are cooking, combine mayonnaise, ketchup, and 2 tsp. Old Bay to a small bowl. Whisk until completely smooth.
For serving:
Serve wedges with dipping sauce. Enjoy!
