Preheat oven to 350°F (175°C). Spray an 8 x 8-inch baking dish with nonstick cooking spray; set aside.
Stir together the oats, baking powder, cinnamon, and salt in a large bowl.
Add the peaches, milk, eggs, pecans, maple syrup, and vanilla extract. Mix well.
Transfer mixture to baking dish, then bake until oats are set and top is lightly browned (about 40 to 45 minutes).
Serve oatmeal hot or warm. Enjoy!

Any variety of peaches will work for this recipe. Choose the juiciest, sweetest ones you can find for the best results.
