Add oats, milk, pumpkin puree, maple syrup, pumpkin spice, and a pinch of salt to a mason jar.
Stir well, then top the oats with the yogurt and pecans.
Cover oats and refrigerate overnight (or at least 4 hours) before eating. Enjoy!
Notes
Milk - Feel free to use any kind of milk, although 2% or whole will give you the creamiest results. Plant based milk also works great. I prefer soy milk, because it has a neutral flavor and thick, creamy texture.Vegan Oats - Use plant based milk (such as almond, oat, or soy milk) and yogurt. Pumpkin Spice - If you'd prefer to make your own pumpkin spice blend, mix together the following spices (makes enough for 4 servings):
½ teaspoon ground cinnamon
¼ teaspoon ground ginger
¼ teaspoon ground nutmeg
⅛ teaspoon ground cloves
Multiple Servings - To prep multiple servings at the same time, line up the jars on your counter. Then add the ingredients assembly line-style (oats, then milk, etc.). Mix and refrigerate as directed.
