Preheat oven to 350°F (175°C). Spray a 9 x 5-inch bread pan lightly with nonstick spray; set aside.
Mix butter and sugar until light and fluffy, using a stand mixer or hand mixer.
Add eggs and vanilla; mix until fully incorporated.
In a separate bowl, whisk together 1 ½ cups flour, salt, baking soda, and baking powder.
Using a spatula, fold flour into butter mixture, until almost completely mixed. Do not over mix; there should be a little flour still visible.
Mix strawberries with 1 tablespoon flour.
Add strawberries, banana, and ½ cup nuts to batter; gently fold in with a spatula.
Add batter to bread pan. Smooth top and sprinkle with 2 tablespoons nuts.
Bake bread for 50 to 60 minutes, or until a toothpick inserted in the center comes out mostly clean.
Let bread cool completely before slicing. Enjoy!
Notes
When measuring the flour, use a spoon to add it to your measuring cup, then level off the top with a straight edge (such as a knife). Avoid scooping the measuring cup directly into the flour ... this compresses the flour, causing you to use too much.Check out the info before this recipe for more tips, related recipes, and more!
