Are you familiar with Plated? It's basically a meal delivery service. They'll send you all the ingredients you need to prepare a complete meal, making it a great weeknight dinner solution. You can choose as many meals as you would like each week.
One thing I really loved about meal delivery with Plated is that you get to pick the exact meals that you'll receive. I've tried other meal delivery services, and there were no options. I was stuck with what was on the menu that week.
I'll eat anything as long as it's vegetarian, but my husband is a little pickier (no beets, olives, etc.), so that was tricky. With Plated, you choose from 9 options each week (including 3 vegetarian and 2 special chef's recipes), and you can even get dessert. Love that dessert option!
When I saw the Burrata and Tomato Salad with Peaches, Basil Oil, and Ciabatta on the menu, I had to have it. I can never have enough burrata in my life!
Everything came in an insulated box, and all the ingredients were pre-proportioned. The ingredients for each meal were also grouped together, which saved me even more time.
Each recipe comes with a beautifully printed card which made following the recipe super simple.
Plus, you can save the cards and repeat your favorite recipes.
One of my favorite things about meal delivery with Plated is how the recipes stretch you to try something new.
I've had burrata in restaurants before, but I've never used it at home. Ingredients like burrata are sometimes tricky to track down, so I loved that I could have it delivered right to my door.
The other unique technique was making a basil oil. It was so easy to make, plus super delicious, and I'll definitely use it in other recipes in the future.

I'm not sure if I've mentioned this before, but my husband travels for his job now. He's usually gone at least three days a week, and more often than not, four.

Have you ever had roasted broccoli? It's seriously delicious and has the potential to turn a broccoli hater into a broccoli lover! The first time I had it was at a restaurant in Seattle, and I've been making it ever since.
The roasted broccoli in this recipe was seasoned with coriander and crushed red pepper flakes. Coriander is one of those spices that tends to get buried in the back of my cupboard, so it was fun trying it a new way.
The other thing I loved about this recipe was the easy tahini sauce that got drizzled over the bowl just before serving.
It was delish, and now I have another way (other than hummus) to use the giant bottle of tahini in my fridge!
I actually made this recipe again this week, too, and I know it's going to become a regular addition to my weeknight repertoire.
