Don't throw them away, make these crunchy Roasted Delicata Squash Seeds instead! They are so delish, and trust me they won't last long.

    This recipe uses simple, easy to find ingredients! Here's what you'll need:

    • Seeds - You'll need some delicata squash seeds, of course! This type of squash doesn't contain lot of seeds (usually about ¼ to ⅓ cup per squash). So I'd recommend making this recipe when you have multiple squash to work with.
    • Olive Oil - Grab some extra virgin olive oil to coat the seeds.
    • Spices - I used my favorite combination of smoked paprika and garlic powder (plus salt and pepper), but you can easily change things up. You'll find lots of tips below.

    This recipe is naturally vegetarian, vegan, dairy free, nut free, and gluten free, so everyone at your table can enjoy it!

    You'll need a sharp knife to cut open the squash, plus a sheet pan to bake the seeds. These nonstick baking sheets are my favorite!

    How to Make Roasted Delicata Seeds

    These Baked Delicata Seeds couldn't be easier to make! You'll find a detailed recipe card below, but here's an overview of the steps:

    1. Prep seeds. Start by separating the seeds from the pulp. It's easiest to work with small bits at a time and to gently squeeze the seeds out. Once, you've done that, place the seeds in a single layer on a baking seed. Let them dry for at least 30 minutes (or for longer, even overnight), or until the outside is dry.
    2. Toss with olive oil + seasoning. Next, you'll mix the seeds with olive oil, spices, and salt.
    3. Roast (or Air Fry). Transfer the seeds to your oven (or air fryer), then roast until browned and crisp, stirring every five minutes. Tip: Stirring frequently helps the seeds cook evenly.

    Seasoning Ideas

    There are so many fun ways to season these Roast Delicata Squash Seeds! Here are a few ideas to try:

    • Salt + Pepper - Simple and classic, but so tasty!
    • Cinnamon Sugar - Combine ½ tablespoon granulated sugar and ½ teaspoon ground cinnamon. Add seeds as soon as they're done roasting, the mix well.
    • Spicy - Toss seeds ½ teaspoon chili powder, ¼ teaspoon garlic powder, and ⅛ teaspoon cayenne.
    • Garlic - Season with ½ teaspoon garlic powder.
    • Garlic Parmesan - Mix with ½ teaspoon garlic powder. Once the seeds are crisp, top them with 2 tablespoons finely shredded parmesan cheese, then cook another minute or two, just until the cheese has melted.
    • Truffle - Season lightly with salt and pepper before cooking, then sprinkle with Truffle Salt to taste when they come out of the oven.
    • Spicy Buffalo - Season with 1 teaspoon of Frank's RedHot Seasoning Powder and a dash of Garlic Powder.
    • Old Bay - Combine with ½ tablespoon Old Bay Seasoning. Old Bay is salty, so go easy on the salt (you can always add more later).
    • Ranch - Toss the hot seeds with half of a (0.4-ounce / 11 gram) packet of dry ranch salad dressing mix once they're done roasting.
    • Pumpkin Spice - Combine ½ tablespoon sugar and ½ teaspoon Pumpkin Pie Spice in medium bowl. Toss with the seeds as soon as they're finished cooking.
    • Sweet & Spicy - Stir together ½ tablespoon granulated sugar, ½ tablespoon pumpkin pie spice, and a dash of cayenne. Toss with the cooked seeds while they're still hot.
    • Cajun - Mix the seeds with a ½ teaspoon of Cajun Seasoning.
    • BBQ - Flavor with a ½ teaspoon of BBQ Rub.

    Note: Measurements are for ½ cup seeds. Size the spice amounts up (or down) depending on how many seeds you have.

    Storage

    Store leftover Roasted Delicata Seeds (there probably won't be many!) in an airtight container at room temperature. They will stay fresh for a couple weeks.
